Pea and Mint Soup

This quick, easy and delicious soup can be served cold (as well as hot), perfect for lunch on a sunny day.  It uses super seasonal ingredients and is a pretty summery colour!

  • Blender


  • Olive oil for cooking
  • 1 Onion Finely Chopped
  • 1 Garlic clove Crushed
  • 350 g Fresh or Frozen Peas
  • 1 Large Courgette Chopped
  • 1 Medium Potato Skin on, cubed
  • 500 ml Water or Vegetable Stock
  • Small bunch of fresh Mint leaves
  • Salt and Pepper


  • Soften onions and garlic in oil for 4-5 minutes
  • Add peas, courgette, potato and stock
  • Simmer 10-15 minutes until potato is soft
  • Add mint leaves with a few set aside for garnish
  • Season with salt and pepper (to taste)
  • Blend and process to a smooth soup
  • Scatter with mint leaves to serve (optional)
