Pea and mint SoupPea & mint soup

This quick, easy and delicious soup can be served cold (as well as hot), perfect for lunch on a sunny day.  It uses super seasonal ingredients and is a pretty summery colour!

Ingredients (serves 4)

  • Olive oil for cooking/drizzling

  • 1 onion, finely chopped

  • 1 garlic clove, crushed

  • 350g fresh/frozen peas

  • 1 large courgette, chopped

  • 1 medium potato, skin on, cubed

  • 500ml water or vegetable stock

  • Small bunch fresh mint leaves

  • Salt and pepper

Method

  • Soften onions and garlic in oil for 4-5 minutes

  • Add peas, courgette, potato and stock

  • Simmer 10-15 minutes until potato is soft

  • Add mint leaves with a few set aside for garnish

  • Season with salt and pepper (to taste)

  • Blend and process to a smooth soup

  • Scatter with mint leaves to serve (optional)
