This deliciously lively salad will help brighten up any summer lunch! Eat it on it’s own or as a side dish to accompany a larger meal.
Ingredients for the Lively Salad:
- 3ozs (75g, generous cup) alfalfa sprouts
- 3 ozs (75g, generous cup) fresh watercress, chopped
- 2 ozs (50g, 1/2 cup) walnuts or cashews, lightly toasted in a dry pan for a few minutes
- 2 teaspoons sesame seeds
- Gently combine in a pretty salad bowl
Ingredients for the dressing:
- 2 tablespoons tahini paste
- 2 teaspoons tamari soy sauce
- Juice of 1 lemon (optional)
- 1/3 of a cucumber, grated
- 2 teaspoons finely chopped fresh mint
- splash of water or cider vinegar
Whisk together in a small bowl or jug and drizzle over salad
Enjoy immediately
