This deliciously lively salad will help brighten up any summer lunch! Eat it on it’s own or as a side dish to accompany a larger meal.

Ingredients for the Lively Salad:

  • 3ozs (75g, generous cup) alfalfa sprouts
  • 3 ozs (75g, generous cup) fresh watercress, chopped
  • 2 ozs (50g, 1/2 cup) walnuts or cashews, lightly toasted in a dry pan for a few minutes
  • 2 teaspoons sesame seeds
  • Gently combine in a pretty salad bowl

Ingredients for the dressing:

  • 2 tablespoons tahini paste
  • 2 teaspoons tamari soy sauce
  • Juice of 1 lemon (optional)
  • 1/3 of a cucumber, grated
  • 2 teaspoons finely chopped fresh mint
  • splash of water or cider vinegar

Whisk together in a small bowl or jug and drizzle over salad

Enjoy immediately
