Ingredients for delicious Immune Support Soup:

  • 10 fresh shitake mushrooms (if dried, soak in warm water for 10 minutes before slicing)
  • 4-inch piece of fresh ginger root, peeled and grated
  • 4 big cloves of garlic, grated
  • 3 pints (1 1/2 litres, generous 6 cups), spring or filtered water

Method:

  • Simmer together for 30 minutes.
  • 6 teaspoons miso paste
  • 6 spring onions, thinly sliced
  • Stir into soup to melt miso, do not boil.
  • Serve hot.
