Date and Molasses Flapjacks

Date and Molasses FlapjacksSatisfying and easy to make date flapjacks. The molasses provides extra minerals and a wonderfully rich flavour.

You will need

100g chopped dates

100ml boiling water

50g coconut butter

1½ tablespoons molasses

150g oat flakes

25g sunflower seeds

Here’s how

Place the dates and boiling water in a saucepan and simmer for 1- 2 minutes, stirring occasionally – until the water is absorbed and the dates resemble a paste

Add the coconut butter and molasses and gently heat and mix thoroughly

Remove from the heat and add the oats and sunflower seeds, stirring well to combine

Transfer to a 7″ square lined tin and cook at 200oc for 20 minutes until the top is browned

Cut into squares but leave the mixture to cool in the tin 

Transfer to a tin and they will keep a good 5 days
